I'm obsessed with cold presssed almond milk, I'm always looking for new ways to consume this pure liquid gold and I think Ive just found my favourite! This is a super easy and satisfying chocolate granola that is so much healthier than it tastes! Loaded with antioxidents and superfoods, this granola is free from gluten and refined sugar - it has sweetness from only coconut sugar and dried cherries.
Perfect for breakfast, but a totally welcome snack or dessert! Enjoy!
Serves 8-10.
Dry Ingredients
3 cups puffed gluten free grains (I use quinoa, brown rice and amaranth)
1 cup gluten free rolled oats or rolled quinoa
1 cup chopped nuts (I use hazelnut, almond)
1/2 cup seeds (I use sunflower)
1/4 cup Power Superfoods cacao nibs
1/2 cup buckwheat groats
1 cup coconut flakes
Chocolate
1/3 cup Coconut Magic coconut oil
1/4 cup water
1/2 cup Power Superfoods coconut sugar
1/3 cup Power Superfoods cacao powder
1 tsp vanilla powder or extract
1/8 tsp flaky sea salt (+ more to taste)
1 tbls Power Superfoods chia seeds
1/3 cup dried sour cherries (or cranberries)
1/3 cup Power Superfoods goji berries
Set your oven to 160C fan forced. Line a baking tray with baking paper.
Combine all the dry ingredients in a bowl. In a small saucepan, warm the chocolate ingredients over a low heat, stirring till they form a smooth syrup.
Pour the syrup over over dry ingredients and gently fold until evenly coated. Pour the contents onto your baking tray and bake in the oven, tossing every 10 min to avoid burning, for a total of 30 min. Remove from oven and stir through chia seeds, goji berries and cherries.
Once cool, store airtight for up to 3 weeks at room temperature, or in the fridge or freezer for prolonged freshness. Serve with almond milk, fresh berries and banana.
