If you love coconut as much as we do, try this healthy coconut icy pole recipe inspired from I Quit Sugar for a delicious summer treat:

You Need:
Icecream
1 cup toasted desiccated coconut.
1 cup coconut water
1 teaspoon vanilla extract.
Sea salt
1/4 cup organic coconut cream.
Stevia or rice malt syrup to sweeten if needed
Shredded coconut to coat

To do:
1. Combine toasted desiccated, coconut water, vanilla extract, coconut cream and salt.

2. Once the mixture is well combined spoon it into icypole molds and place in the freezer to freeze for about 3 hours. This should take around 3 hours depending on the size of your icy poles.

3. To make it extra special make a natural chocolate coating, dip the frozen icy poles in and freeze again!
