Treat yourself honey! (The Nourished Life way of course) This week @theblueingredient has put together some super healthy, hearty and delicious pancakes with chocolate sauce, that are totally gluten, sugar, dairy and guilt free! The perfect winter weekend breakfast.
Ingredients:
1 banana
2 eggs
1/8 tsp baking powder
1 tbsp almond meal
½ tsp cinnamon
1 tbsp coconut oil
½ tbsp cacao powder
1 tsp honey
1 tsp shredded coconut
Handful of blueberries
1. Mash banana in a bowl with a fork
2. Add eggs, cinnamon, baking powder and almond meal and mix well
3. Heat 1 tsp of coconut oil in a pan and pour mixture into pan, do this in batches depending on how big your fry pan is. For every new batch add another ½ tsp of coconut oil to the fry pan
4. Decorate with coconut and blueberries
Chocolate topping sauce:
1. Heat oil in a saucepan and add in cacao and honey and stir well until smooth
2. Pour over pancakes
